Pascal’s Plat Superb
5-6 medium size tomatoes
5-6 medium size potatoes
2-3 small eggplants
1 large onion
Olive oil
Thyme
Feta cheese
Salt and Pepper
Preheat oven to 350º F. Prepare a 9x13 casserole dish by sprinkling a little olive oil in the base and covering the bottom. Cut the onion in small strips and layer in the bottom of the casserole dish. Thinly slice the tomatoes, eggplant, and potatoes to approximately the same size and thickness (you may have to cut some items in half to get them to size to each other). Then vertically layer them alternately in rows in the casserole dish (potato slice, tomato slice, eggplant slice—fun for kids to help prepare). When the dish has been filled with colorful rows of alternating veggies, sprinkle fresh thyme, salt and pepper and olive oil over the top. Bake in the oven for 30-45 minutes, keeping an eye on it for tenderness. When done, remove from oven and sprinkle desired amount of feta cheese on top of dish and serve hot. Bon appétit!
